I like beets, so I’m always looking for ways to use them when I cook or make juice. Beets have an impressive nutritional profile including low fat and calories, and a wide range of vitamins, minerals and other nutrients. In addition these nutrients may provide health benefits such as, lower blood pressure, improved athletic performance, and better brain health. Beet is also a mild anti-inflammatory.
Orange and beet juice is a classic combination that is great on its own and that offers the opportunity to easily create delicious variations. I find orange juice a little sweet most times of the year so I often add enough lime juice to cut some of the sugar. I’ve done the same thing here, adding about a third of a lime’s juice to about 12 fl oz of juice. Fresh herbs are also a great addition to this juice. Just add a small amount to your vegetable juicer along with the beets. I’ve been adding dill recently but thyme, basil, and rosemary also work well if you like those flavors. Add cucumber for a lighter juice with reduced sugar content. Peel the cucumber before juicing for a more vibrant red color.
After making this I noticed that it was begging for a little vodka. This turned out to be so good that next I decided it must have a name. I mean, how would millions of parched cocktail drinkers worldwide order this fabulous creation if it had no name? Of course if you ever try to name something, you will find that the first hundred or so names you like are already being used. It turns out that the Bloody Screwdriver is a Halloween cocktail or punch made with either blood orange juice and vodka or orange juice and vodka with grenadine. If I were naming a company or product this could be a problem. I mean if I named my new bank The Better HBC I would never hear the end of it. But come on, this is just a cocktail. An adjective will do.
Recipe: The Better Bloody Screwdriver
Equipment: You will need a citrus juicer and a vegetable juicer to make this recipe.
2 1/2 to 3 medium oranges
2 small beets or 1 medium beet
1/4 – 1/3 lime
Lime slice or wedge for garnish
1 1/2 ounce vodka – for a delicious Virgin Better Bloody Screwdriver leave this out.
Thoroughly wash all your ingredients with cold water. Cut the beets so they will fit into your juicer.
Juice the orange and lime using a citrus juicer and keeping lime and orange juice separate.
Juice the beets with a vegetable juicer.
Combine the beet and orange juice and add lime juice to taste. Stir gently to combine all ingredients
Pour into a glass with ice, add vodka (or not), mix gently, garnish with lime, and enjoy.
