Excelsior – Recipe

Excelsior is a nutritious, semi-sweet green juice. Pear gives this juice a little sweetness and a wonderful mouthfeel. Cucumber makes it extra hydrating and keeps it from being too sweet. We think this is a nicely balanced combination of greens. Just alkaline enough to balance the sweetness of the fruit and with a pleasant variety of flavors. A 12 fl oz serving contains only about 100 calories and provides 150% of your daily value of vitamin A, 50% of vitamin C, 370% of vitamin K, and 50% of copper, as well as a host of other vitamins, minerals, phytonutrients, and antioxidants. Recipe

Makes about 12 fl oz (355 mL)

Ingredients

Pear 200 grams
Cucumber 180 grams
Kale 90 grams
Chard 70 grams
Spinach 50 grams
Parsley 30 grams
Lemon juice 6 grams

Equipment

Vegetable juicer

Instructions

  1. Wash all ingredients
  2. Process all the ingredients except the lemon in the juicer according to manufacturers recommendations
  3. Squeeze the lemon by hand and add it’s juice to taste.
