This smoothie is a real treat and is one of the first drinks we’re putting on our new café menu.
2 cups spinach
2 Frozen bananas
2 cups unsweetened rice milk
1/2 cup coconut water
1/4 cup fresh mint leaves
1/4 cup cacao nibs
1 teaspoon vanilla extract
For a thicker, colder smoothie, use frozen spinach or freeze half the rice milk in an ice cube tray before adding it to the blender.
To freeze bananas, wrap peeled bananas in plastic wrap and leave them in the freezer overnight.
If you are vegetarian or cutting down on meat, you can add half an avocado to increase the niacin content and double the cashews or add hemp seeds to increase the zinc content.
